The asparagine at the heart of EUBI products originates in the Maremma, grown in that strip of land between Cecina and Tarquinia (between Lazio and Tuscany). A combination of factors—such as mild temperatures, mixed limestone and volcanic soils, sunlight, and the wind blowing in from the nearby Tyrrhenian Sea—make this land the ideal environment for the growth of the “king of spring,” green asparagus, and endow it with unique organoleptic characteristics, flavor, and taste. The research/analysis, conducted in collaboration with a university in Rome, initially focused on various extraction protocols to select the best one and isolate the water-soluble and fat-soluble bioactive compounds. Subsequently, the study sought to identify and quantify the main antioxidant molecules. The primary antioxidant compounds—such as glutathione, vitamins C (ascorbic acid) and E, ferulic acid, phenols, and flavonoids—were identified.
